So by popular demand, here is the recipe for the Pear and Goat Cheese tart that was at our housewarming party! This is a beautiful little recipe, so easy and fast and it looks so incredibly beautiful. It tastes like you put hours of thought and work into it, and as long as you don’t make your own puff pastry.. you won’t! Luckily I didn’t have any pictures of this gem, so I had to make it tonight just to take some pictures.. Shucks. xoxo
1/2 Pkg of Puff Pastry (One square of the frozen kind, about 14oz)
1/2 cup goat cheese
1 Bosch pear, cored and thinly sliced
1/2 small red onion, thinly sliced
2 Tbsp packed brown sugar
1/2 tsp of salt and pepper
1/2 Tbsp chopped fresh thyme
2 Tbsp butter
Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper. Roll out puff pastry to about 12 by 7 inches, prick bottom with a fork, leaving a 1/2 inch border, put on the parchment paper. Finely crumble goat cheese all over. Arrange pear slices (I usually end up with about 10 slices of pear on the tart) over the cheese. Scatter onion on top. In a small bowl, stir together brown sugar, thyme, salt and pepper and sprinkle evenly over the tart. Dot top of tart evenly with butter. Bake on middle rack for approx 30 minutes until pastry is golden and pears and onions are tender.
