As J pointed out to me this morning after making me eggs for breakfast, in the past 3 days I’ve had somewhere around 18 cups of coffee, and two dinners, one of sushi and the other Indian food, a glass of wine and two Christmas cookies. And that’s it. I hadn’t realized, being so busy with school, life.. sleeping, that I really wasn’t focused on being healthy. I tried to remember the last time I had a piece of fruit, and I’m pretty sure that when they were passing out free organic apples at the shop to promote the 100 mile diet I had 2….3 weeks ago. SO.. I thought I should probably catch up on my veggie eating. This Poached Pear and Blue Cheese Salad from Chow.com seemed like just the thing to start with. Tomorrow.
